CARNE ASADA FRIES. I just saved my husband money.

Lately, I have been craving this Carne Asada fries from the Mexican restaurant here in Bend. I know I can make it, but I was too tired and busy to do it, so I have my husband drive there, and I drove there by myself ;and as if it was not enough, the whole clan drove and ate our Sunday lunch there just to have our fill of this overly delicious meal.

One day, as we were gearing to go to the said Mexican restaurant for the nth time, I finally am convinced that boy, this will hurt our budget if we will keep this habit up, so  I finally  made this Carne Asada Fries. And saved us $ 39 dollars one dinner time. NO REGRETS.

First,  I bake the fries and while it is baking, I go ahead and make the guacamole, stick it in the fridge and make the Carne Asada and then you can watch Hulu while waiting for the fries to cook. And one more plus, this meal does not need a fancy ingredients.

WHAT I LOVE ABOUT THIS CARNE ASADA MEAL:

  1. It saved us money.
  2. No fancy ingredients.
  3. Large batch, enough for 4 people

CARNE ASADA FRIES

Ingredients
CARNE ASADA
  • 1 lb thinly cut lean beef
  • 1 tablespoon white vinegar
  • 2 tablespoon soy sauce
  • salt and pepper to taste
GUACAMOLE
  • 1 avocado,pitted ( you can add more avocado)
  • ¼ cup red onion, chopped
  • juice of ½ lime
  • 1 /2 cup tomato,chopped
  • ¼ cup cilantro,chopped
  • salt and pepper to taste
POTATO FRIES
  • 8 pieces medium sized potatoes ,sliced
  • salt and pepper to taste
  • ¼ cup or more canola oil
  • cooking oil spray
TOPPINGS
  • Chopped gucamole
  • Mexican Cheese
  • Lime Juice
Instructions
  1. Put oven rack in the middle of the oven and pre heat at 350 F.
  2. Spray baking pan.
  3. In a small bowl, mix all of the potato ingredients until salt and pepper coat the potatoes,then arrange potatoes in the pan.When ready, bake it for 45 minutes, or until potatoes are soft.
GUACAMOLE
  1. In a medium bowl, mash avocado and add in the rest of the ingredients. Season with salt and pepper.Mix completely and refrigerate until ready to use.
CARNE ASADA
  1. Heat frying pan and add in beef. Cook meat until it is not pink. Add the rest of the ingredients and season accordingly. Set aside'
  2. YOU CAN HEAT OIL TO COOK BEEF, BUT I OPTED NOT TO USE OIL
TO ASSEMBLE CARNE ASADA
  1. When fries is ready, line them in a bowl or flat plate.
  2. Add the Carne Asada on top.
  3. Top the Carne Asada with the home made Guacamole.
  4. Then sprinkle with Mexican cheese.
OPTIONAL:
  1. Lime juice and extra gucamole
