This is an easy bread recipe that you can make. It is a copy-cat for Auntie Anne’s soft pretzels.
When I lived in in Washington and Oregon,I had not heard about Auntie Anne’s pretzel store. When I moved here in KS and went to a mall here, I was met with a very delicious aroma of cinnamon in one of the small stalls.The line was really long and the people were eager to get a taste of those pretzels. My curiosity won me over and in a second, I was one of those people who crazily wait to get their pretzels.
One try of the pretzels and I was hooked.
Today, when I was monitoring my bank statement, Auntie Anne’s, it showed was a big expense each month. Why is that? Because when I am bored, I go to Auntie Anne’s. When I crave something good, I go there. One time when my husband came home late, he has an Auntie Anne’s package just to surprise me. When I am going to Barnes and Noble, which is often, I swing by the mall to get the pretzels.
As I said, the list of Auntie Anne’s bill in our in bank statement was ridiculously long, you’d think I am the owner of the store. It is a big chunk of money spent on pretzels – when I know I can save money if I make my own.
So I am taking over, and I decided to be pro active in tackling this Auntie Anne’s spending addiction into my small hand. I am not going to spend another penny on this store ( only sometimes) – I AM MAKING MY OWN VERSION OF THE PRETZELS.
I wish that I can claim that this is exactly the same taste as the pretzels there, but it is good in its own right. Good enough that when the pretzels came out from the oven, I zestily consumed three and later in the day, I got another 2 more. And to think, I am claiming I am on a diet.
It is good enough that when I was so stuffed, I was still craving for it . I was imagining pairing my coffee and tea with these pretzels. It is good enough that I drove and braved the wind and freezing temperature to get my baking soda, because we just ate the 16 pieces of the pretzels, and I have to re-make it. I need the baking soda for another batch of pretzels for tomorrow.
2 1/4 teaspoon yeast = to 1 packet fast rise yeast ( I use the fast rise yeast - the one in which you do not dissolve)
2 tablespoon unsalted butter (NOTE: IN THIS WHOLE RECIPE, WE USED A TOTAL OF 5 TABLESPOON BUTTER . Divide it in 3 tablespoon for brushing the pretzels and 2 tablespoon for the dough)
3 tablespoon packed brown sugar
1 cup milk
DISSOLVED BAKING SODA MIXTURE:
3 cups water
1/3 cups baking soda
FOR THE CINNAMON TOPPINGS:
1/4 cup brown sugar ( I used the Turbinado Sugar because it has bigger granules but it ok if you use regular brown sugar)
3 tablespoon unsalted butter
1.Grease a baking sheet with non stick oil.( I used two baking sheets here. This will not burn the pretzel's bottom too much. Set aside.
Grease also a bowl with oil. Set aside.
2.Place baking soda and hot water ( I use the warm water from the faucet. No need to boil or microwave) and set aside.
3.Place all purpose flour, salt and yeast in a stand mixer bowl. Mix using spoon or wire whisk.Make a well in the middle. Set aside.
4.Place the sugar, milk and butter in a small bowl or microwavable cup and mix them so that the sugar will somehow dissolve. Then microwave for 1 minute and thirty seconds.
5. Pour milk mixture into the flour mixture. Right into well you made.
6.Knead the dough by hand or by using the electric mixer until dough is pliable and smooth.
If the dough is gooey just put some flour into your hands and it will make it easier to work on the dough.
7.Form into a ball and place into greased bowl to rise. Cover this bowl with towel or plastic.( See notes below)
8.Let the dough rise in a warm place for an hour. ( See notes below)
After an hour, Preheat oven at 450 F

10.Dip the pretzel dough into baking soda mixture. Make sure to drain the water. Place in the baking sheet and drizzle with brown sugar.
NOTE: Drizzle sugar right away because if you don't, the dough will dry and the sugar will not stick. Then sprinkle with the cinnamon powder.
11.Do steps number 9 and 10 to the rest of the dough.
12.Bake for 10 to 15 minutes ( you have to pay attention because the bottom of the pretzels will get burn.
13.When the pretzels are baked, MELT THE 3 TABLESPOON BUTTER brush pretzels with the melted butter. Serve hot. You can refrigerate the left-over then microwave if you want to eat it again..
THIS IS BEST WHEN SERVE HOT. NOT TOO GOOD WHEN COLD 🙂
I use fast rise yeast the one where you do not dissolve in water Tips to make the dough rise: Heat oven to at 220 F for 1 minute then turn off. This will become the warm place where I let my dough rise. Place the dough there for one hour.
