As I am posting and writing this entry today, I am munching my Quinoa and Eggplant Stir fry right at this moment and imagining this Key Lime Pie which I made 2 weeks ago. I miss this pie because it is so good. The color of those pie is just an introduction of what deliciousness you will expect. Sweet, sour, moist blended together in a dessert. I wish, I mean I really wish, you will try this for your Thanksgiving dinner for this will surely be a hit! And not to mention another easy dessert to make.

I got this recipe from Paula Deen’s magazine and I made some changes with the crust; I  used the  leftover from Pumpkin Cheesecake  I made awhile back and I DID NOT REGRET EACH BITE AT ALL! Instead of baking this pie in a one pie pan, I used the smaller pie tart pan recreate a feeling of food portioning which actually helped because if I did not do this, I will certainly eat the whole lot of this pie. Enjoy it,will yah?
