While I was away, I made this casserole in advance for the kids to eat. I just grabbed a bit of it for my work lunch and i assumed that there will be something left when I came home… but boy, was I wrong; the kids ate this casserole to its last bit. And you know what, I am glad. Isn’t it what motherhood and being a wife is all about, feeding HEALTHY AND DELICIOUS ¬†food for your family? SO, I feel complete.

I usually prepare make ahead dinner for the kids… I set them out on the table ready for them to eat. Doing this saves me so much time and less stress when I am at work. I do not worry about them calling me at work asking, “what’s for dinner,” and my mind is at peace that they are not munching some junk food. Well I do not really allow junk foods in the house, but still, I do not want the kids to get hungry. So this casserole came into the picture. It is because it is so easy and stores in the freezer or in the fridge really good.

I incorporated veggies in it like large bell pepper and a handful of Thai Basil leaves on the sauce which accentuated really well with the sauce I used.I used two cheese tomato sauce to add a little bit of saltiness against the brown sugar and mozzarella cheese. You can use spaghetti pasta with this but in my case, I used large elbow macaroni since I still have left over from the Velveeta Cheese Burger Mac and Cheese. I hope you will give it a try for your next dinner- like tomorrow- and enjoy it as much as we do. Just make sure that you hide some for your pack lunch because this casserole goes fast.
