Pepperoni Pizza Potato Skins
These potatoes have been sitting in my fruit stand for so long that they are literally morphing into some kind of a dog or what is this, an alien maybe? OR, a Lochness monster !!!!
Before these potatoes will turn into something that may eat my whole clan, I have to make something out of them. I made a potato recipe, just perfect for a healthy dinner.
And how I am glad that these potatoes have turned into lovely and colorful pizza in a boat… My son ate these for breakfast, lunch, and dinner. I was astonished. I thought the “monster ” above, ate my son, and “IT” replaced him with a new one. My son who hates potatoes did not even notice that he gobbled everything including the potato skins. Pepperoni Pizza Potato Skins
Ingredients
- 4 bakre potato skins
- 1 cup pizza sauce freeze left over
- 1 cup grated mozarella cheese
- 1/2 cup diced pepperoni
- 1 tbsp minced fresh parsley
Instructions
- Prepare potato skins on a flat baking sheet and pour in a spoon of pizza sauce, mozarella and pepperoni. Bake the skins for a few minutes until the cheese is bubbly. Sprinkle on some fresh parsley and serve immediately. Enjoy.
