Oh my, it is summer! Actually, it is suppose to be still spring, but we are bombarded with 96 F heat today and as usual, my son is getting sick as what happens all the time when season changes. My cute little boy is having such a bad asthma attack today,so it is just appropriate to have this fruit summer salad that is filled with nutrients. Blueberries and raspberries for antioxidants, pineapples for vitamin C, melon for Vitamin A and C and for hydration. I do not know what can go wrong with this salad.
And aside from the nutrients and effective cooling effect of this fruit salad recipe, it has mint and ginger syrup in it too to pep up the fruits’ flavor. I like how the lemon zest and the lemon juice blended with the mint and ginger. And should I talk about the mint smell and how easy it is to make this? With the melon baller, it is a snap. And if you happen to have no melon baller, you can cut the fruits into small cubes and you are ready.
